Developing New Healthy Beverage, VTC Alumnus from Food Industry: New Food Culture – 2024 April Issue


Healthy and Playful, Promoting a New Food Culture

VTC Community Engagement Unit (CEU) recently invited alumnus and Food Group Chairperson Mr Simon WONG Kit-lung to collaborate with students and professor from the Department of Food and Health Sciences of Technological and Higher Education Institute of Hong Kong (THEi) on a feature video titled "Community Connect with Alumni”, exploring insights into food technology and community engagement projects. THEi students presented Mr WONG with one of their industry-collaborated projects, the "Sparkling Thin Evodia Cacao Husk Tea". This beverage contains herbal ingredients, and the research team hopes to promote the sustainable development of Chinese medicine and healthy food culture in Hong Kong through its development.

After trying the tea, Mr WONG commented on its market and community value. He said, "If the ingredients and health benefits of the sparkling tea can be promoted, it should be well received by the public." He also pointed out that the tea tastes like beer and can be a healthy alternative to alcoholic beverages, providing the community with another healthy beverage option. Regarding the product's taste, the team was able to use a laboratory instrument called “e-tongue”, for objective and quantifiable analysis. The e-tongue can collect data on the bitterness, astringency, and acidity of the sparkling tea. This data is then visualised as a "Taste Profile", allowing developers to improve the product's ingredients and taste more accurately and efficiently. "With the help of technology, we can truly see the taste!" remarked Mr WONG.

Art and Technology: Introducing New Performance Models to Young Audiences

With the help of Community Engagement Unit, VTC Information Technology (IT) Discipline alumni Mr Mo TANG Chun-wo and Mr Trevor LAM Cheuk-fung, creators of the multi-camera livestreaming mobile app "MixTra-Cam", collaborated with the Hong Kong Arts Festival's Young Friends to produce the stage play "All Things at Once". This play explores the journey of young people searching for their identity, incorporating actors' authentic expressions on social media, through lenses, and on stage, captivating young audiences. Mo and Trevor utilised "MixTra-Cam" to livestream the performance from multiple angles, allowing viewers to experience the performers' diverse facets. They also shared their production experience during a backstage tour of "All Things at Once", promoting the innovative art-tech performance model to the community.

VTC students attended the play to support their seniors. After the performance, Mo led a guided tour for high school students, explaining the applications of "MixTra-Cam" and multimedia creation, demonstrating the practical application of IT in various fields. One participating student remarked, "I never thought multi-camera livestreaming could be related to stage production. It turns out IT can be applied in so many different areas."

Buses Emblazoned with Environmental Messages Travel Across Hong Kong

CEU recently led students, from VTC Diploma of Foundation Studies – Design, to visit the Kowloon Motor Bus (KMB) Kowloon Bay depot in preparation for the "New Look" bus design competition. This collaboration between Design Discipline and KMB aims to create bus designs that promote environmental protection. The best designs will be printed on three KMB buses as the awards, which will travel across various communities in the New Territories, Kowloon, and Hong Kong Island. These buses will serve as mobile billboards, raising awareness about environmental issues and inspiring positive change.

Before hitting the streets, the newly emblazoned buses will be showcased in community exhibitions. Please stay tuned for these buses as they spread the messages of environmental protection throughout Hong Kong.

VPET Demonstrates Compassion and Support for Individuals with Hoarding Disorder

To help raise public awareness of the challenges faced by individuals with hoarding disorder and promote empathy and understanding, the Salvation Army invited CEU and Youth College to create a virtual reality (VR) model of a hoarded home. Students, from VTC Diploma of Vocational Education - Fashion Design, captured the hoarded home using their multimedia technology knowledge and filming skills, and then created a VR experience that immerses viewers in the reality of someone struggling with this condition.

The VR model will be showcased at the S+ Expo 2024 on 3rd May, where students will share their filming and production experiences.
